Cooking Steps

2、Half an hour later, drain the pig liver and wash it.
Add starch (it's OK to put more starch), salt, cooking wine and marinate for about an hour
3、Chop onion, ginger and garlic in the middle

4、Cut green peppers or other side dishes
You don't have to put green peppers. You can serve whatever you like. You can also put celery, onions
5、When the pickling time of pig liver is up, boil water in the pot, pour the pickled pig liver into the water, blanch it for a while, the pig liver changes color, turn off the fire, and take out the pig liver. At this time, because of the heating, the water may become starchy. Never mind. Take out the pig liver and rinse it with water
Be sure to rinse the starch paste in the pig liver with water, and control the water for standby (as shown in the figure below, the pig liver after scalding and cleaning)
6、Pour a proper amount of oil into the pot, add scallion, ginger, garlic and pepper to stir fry until fragrant, and add sugar
7、Pour in pig liver, stir fry, add soy sauce to color and salt to taste
